Programme Description

The programme aims to train, coach and impart skills to students to perform roles in the Hospitality Industry. Careers in Hospitality revolve greatly on fulfilling and even exceeding guest requirements and expectations. It is challenging, rewarding and at times even glamorous as you get to meet important and celebrity guests. It is also down-to-earth as you meet all kinds of guests and get involved in upfront service.

Programme Outline

Module 1: Basic Restaurant Service
Introduce students to the nature, trends and outline of the industry with emphasis on nutrients, balance diets, hygiene & nutrition and the various food products and groups like seafood, meat, dairy products, nuts, fruit and vegetables.

Module 2: Beverage Service
Introduction to the classification types, trends, service styles and growth of beverages and beverage outlets; with respect to alcoholic & non-alcoholic classifications; and inventory & stock control.

Module 3: Restaurant Service
Learn about herbs and spices, coffee, tea, pasta and food holding, spoilage, food processing and additives. Students will also be exposed to organization structures, service styles, menus and standard culinary terminology.

Module 4: Food & Beverage Operations
Study into aspects of Payment systems & POS machines, Room Service procedure, Stewarding, banquet and Bill collection procedures. Basic First aid and safety are also included in the module.

Module 5: Tableside Service
Gain knowledge of Showmanship and flambé service, equipment, usage and principles of Tableside Service.

Module 6: Service Quality
This subject examines the components of service and their relationship to the hospitality industry. Some of the aspects discussed include concepts of ‘service triangle’ and ‘service chain’, ethical responsibilities of staff and guests, and the importance of the relationship between staff, management and guests.

  • Basic Economics
    This subject aims to create awareness and understanding of the economic environment within which all organisations operate and to familiarise students with basic economic terminologies.
  • Hotel Law and Security
    Two aspects will be taught in this subject – the legal system affecting the hospitality industry and security issues in hotels. Students will be given an introduction of legal system in Singapore as well as the various regulations affecting hotel operations in Singapore. Students are expected to comprehend security concerns pertinent to a hotel operation.

Module 7: Restaurant Practice
Students will be exposed to practical hands-on sessions under the supervision of an instructor, to understand food operations and achieve competency in service.

Sub sessions include bar practical and flambé sessions in mock-up facilities.

These sessions help to introduce students to the day-to-day operations of food and beverage.

Assessment

A variety of assessment methods are used including assignments and examinations. The assessment of each subject will be based on 60% for final exam and 40% for presentations and projects

Entry Requirement

GCE ‘O’, ‘N’ Levels or Completed year 10 of high school for international students.
Matured students above 21 yrs of age
IELTS 4.5/TOEFL of 500 or equivalent English competency test.

Medical Check Up

Upon obtaining of approval of student pass you are advised to make a provision of $100 - $200 for medical checks and visa required by the immigration in Singapore. The usual cost of the medical check up will be at approximately S$60 - S$80.

Living Costs

Students staying in Singapore will incur expenses of approximately S$600 - S$800 a month including transportation, food and housing (room sharing costs). This will depend on the lifestyle of the student.

Application Procedure

Students need to submit the following documents to find the eligibility for the programme.

  • AEC Admissions Application Form
  • ICA’s Form 16 & New V36
  • Photocopy of applicant’s travel documents.
  • Photocopy of applicants original birth certificate or other documentary evidence of Birth with both parents’ name if there is no Birth Certificate. In cases where a Notarial Certificate is submitted, a photocopy of the official Birth Document or other documentary evidence must still be included.
  • Educational Certificates & Transcripts. In cases where a Notarial Certificate is submitted, a copy of the Education Certificate and result transcripts must still be included.
  • 2 Passport sized photos.
  • Documentary proof of financial ability. (for visa required countries)
  • Bank statement/fixed deposit accounts/savings accounts
